What's with all the interstellar pineapples?
Fantastic question! The use of pineapples in relation to marijuana began on Reddit on the /r/trees subreddit. On the original layout of the sub, the upvote and downvote buttons were pot leaves, with a dot between them. When someone upvoted a post, the dot and pot leaf above it looked like a pineapple to those who had maybe partook a bit too heavily of the plant, and thus, the pineapple became the symbol of /r/trees, and later has been adopted more into the mainstream as a euphemism. The outer space should be obvious. It looks awesome.
(Also, pineapples are delicious.)

And trees?
Trees is a slang term for marijuana, a way to talk about it without attracting undue attention. Another useful slang term would be "Ent", which refers to a person who uses trees. This is a reference to the Ents from Lord of the Rings, the giant tree-people.
